i was wondering if there are any log files in the Greenbone Source Edition that i can look up if the system does not show normal behaviour?

Yes, every component has it’s own log file. They are located at $INSTALL_PREFIX/var/log/gvm. $INSTALL_PREFIX is normally /var but depends on your installation method.
